I thought they had dark hair, and eyes, but I met this girl who is French, and she has light blonde hair and blue eyes..

Average population is dark blond hair to brown with brown eyes, but there are huge variation depending on the population which settled in a given region. Normandy has light eyes and light hair, like Alsace, south is darker.

France is not a single population but a patchwork of different people that were conquered and integrated in the kingdom through 2000 years of conquest and until the 20th century people did not move and mix much so you had looks that were typical of your region but not of the next one.

on average they have brown-light brown hair and brown eyes, quite pale skin, the norther you go the blonder they tend to get. In the south they look more mediterranean.

I'm overgeneralizing though, also consider that a lot of french have non french origins from the past waves of immigration (italian, portuguese, spanish, african)

Most have dark brown hair and brown eyes with darker skin. It is very hard to find person with blue eyes and much harder to find someone with blonde hair!!
